Asian Cabbage Salad for One

This salad was a creation of my daughter. After a hard days work, she looked in the refrigerator for something quick and healthy. What do you do when all you see is a fridge full of produce? After declaring she felt like something Asian, she came up with this delicious colorful crunchy bowl of yum. (I took a bite, so I know)

Sliced (or shredded) Cabbage (whatever variety you have)

Sliced Red Pepper

Shredded Carrots

1/2 Avocado

Chopped Cilantro

Raw Cashews (Peanuts would also work well)

Rice Wine Vinegar

Toasted Sesame Oil

Juice from 1/2 a lime

Salt to taste

Put the shredded vegetables in a bowl. Scoop the avocado into the bowl and “Mush” it together with you hands. (They say your hands are your best kitchen tool)

Add a few splashes of rice wine vinegar, and a couple swirls of toasted sesame oil.

Add chopped cilantro and cashews.

Quick. Easy and very satisfying.
