Simple Way to Eat Beets

Beets are worth your time. I know you think you don’t like them, but I say, give them another chance.

Here’s a simple way to prepare and enjoy beets.  Simple wash and quarter (no need to peel)
Sprinkle with a bit of olive oil, wrap in foil and roast in a 375 degree oven. Leave them in the oven until tender when pierced with a knife. Should take at least an hour or more. After removing from the oven, let them cool slightly. Using paring knife the peels should easily come off.

Cut the beets into bite size pieces and put into a container. Sprinkle with a good amount of rice vinegar, chopped green onions and chopped fresh parsley. So simple, yet so good.
